Pumpkin Seed Protein Muffins
I love these muffins ! Not only are they low in sugar and contain healthy fat, they are also high in protein, low in oxalate and may be helpful in a healthy detox program. I keep them in the fridge and grab one or two when I am crunched for time and need a quick snack. These are great breakfast foods.
Ingredients:
- 1.5c of coconut flour
- 1/2 c flaxseed meal
- 2 servings egg replacer
- 1/2c dairy free milk (choose from coconut, pea, hemp, rice)
- 4 tbsp pumpkin seed butter
- 4 scoops pumpkin seed protein powder
- 1 tbsp avocado or coconut oil
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2c unsweetened applesauce (opt)
- 1/4c stevia (opt)
Instructions
- Mix all the dry ingredients together
- Add in the wet ingredients
- Vigorously mix in the egg replacer (follow preparation of egg replacer)
- Pour the mixture in paper muffin tins, filling ¾ full
- Bake at 350 degrees for 30 minutes
