AIP approved muffin template
I wanted to write a blog about an AIP approved muffin recipe template I created that can be modified to add any ingredients you want. This template provides the base of the recipe. You can feel free to be as creative as you like, you can add cacao powder, dark chocolate chips, blueberries, lemon flavoring, bananas…whatever you want. Since the AIP diet can tend to be strict, breakfast ideas become difficult. The muffin recipe to the rescue. Just 1-2 muffins with a bit of ghee spread on it is delicious and quite filling!
Here is the recipe:
- 1c coconut flour
- 3/4c cassava flour
- 2 servings egg replacer, prepared according the to package instructions
- 1 tsp aluminum free baking soda
- 1 tsp baking powder
Here is where the magical creative touch happens. You can add in anything to change this recipe up. For blueberry muffins, you will need 1c frozen blueberries and 1/2 dairy free milk (such as hemp milk) to give it moisture. For banana muffins, 3-4 pureed bananas is plenty. For apple muffins, 1c sliced apples, cinnamon and 1/2c unsweetened apple sauce. For chocolate muffins, try adding in 3-4 tbsp of cacao powder and 1/4 Lilly’s dark chocolate chips.
These muffins are gluten free, grain free, dairy free, nut free, soy free and egg free. And they have a little flavor of your own personal touch
