I wanted to share my sauce recipe because its a winner in our house! My daughter loves this sauce and it is full of micronutrients that she needs such as vitamin C, folate, vitamin K, vitamin A, and many phytonutrients. This may not be a food a sensitive bladder can tolerate now, but as you heal, you may be able to tolerate small amounts of this, it is so yummy!
- 6 organic Tomatoes, ripe and sweet
- 4-6 cloves garlic, peeled
- 1c raw kale
- 1c raw spinach
- 3-4 carrots, peeled and diced
- 2-3 celery stalks
- 1c jicama root
- 4-5 leaves fresh mint
- -handful fresh cilantro
- handful fresh basil
- Italian seasoning
- Celtic sea salt
- 4 tbsp. Organic extra virgin olive oil
- 2 small cans of organic tomato paste (BPA-free liner!)
I use my Blendtech blender for this. Cut up the tomatoes and blend with garlic and some of the other veggies. You may have to run this a few times to get the consistency you want. Sometimes my blender gets stuck as well due to the thickness.
Once you have the consistency you desire, you transfer the sauce to a stainless steel pot. Add your oil, Italian seasoning, sea salt and bring to a boil. Let is simmer for about 5-10 minutes and add the tomato paste and mix well until you get the color that you desire. Allow simmer 5 more minutes.
Note-if sauce gets too acidic, you can add 1 tbsp of coconut sugar which will fix the problem!
This is great on spaghetti squash, gluten free paste, or just with a side of organic grass-fed meatballs and a side salad!
